    Preparing the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Drying the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove any excess moisture.

    Heating the Oil

    In a deep fryer or large heavy pot, heat the vegetable oil to 350°F (175°C).

    Frying the Potatoes

    Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 4-5 minutes or until they are golden brown and crispy. Do not overcrowd the pot.

    Draining and Seasoning

    Remove the fries from the oil and drain them on a paper towel-lined plate. While they are still hot, sprinkle with salt, black pepper, and paprika to taste.
