Chicken Picata

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Dredge them in flour, shaking off any excess.

    Cook the Chicken

    In a large skillet, heat olive oil and 2 tbs of butter over medium-high heat. Add chicken and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove chicken from the skillet and set aside.

    Make the Sauce

    In the same skillet, add minced garlic and sauté for 1 minute. Pour in chicken broth and scrape up any bits from the bottom of the skillet. Stir in capers and lemon juice. Let it simmer for about 3-4 minutes.

    Finish the Dish

    Return the chicken to the skillet and cook for another 2 minutes. Stir in remaining butter and chopped parsley before serving.

Garlic Mashed Potatoes

    Boil the Potatoes

    In a large pot, add cubed potatoes and whole garlic cloves. Cover with water and bring to a boil. Cook until potatoes are tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and garlic. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

    Prepare the Asparagus

    In a separate skillet, heat olive oil over medium heat. Add asparagus and sauté for 5-7 minutes until tender. Season with salt and pepper.
