Marinate the Pork
In a bowl, combine the minced garlic, orange juice, lime juice, cumin, oregano, salt, and black pepper. Add the pork loin to the marinade, making sure it's well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cook the Pork
Preheat the oven to 350°F (175°C). Remove the pork from the marinade and place it in a baking dish. Bake for 25-30 minutes or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

Assemble the Sandwich
Slice the ciabatta bread in half. Spread Dijon mustard on both halves. Layer the sliced pork, cured ham, Swiss cheese, and pickles on the bottom half of the bread. Top with the other half.

Serve
Slice the sandwich in half and serve hot with additional pickles on the side.
