    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Prepare the Custard

    In a saucepan, heat the heavy cream and vanilla bean (split and scraped) over medium heat until it just begins to simmer. Remove from heat and let it steep for 15 minutes.

    Whisk Egg Yolks

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until well combined and slightly pale.

    Combine Mixtures

    Remove the vanilla bean from the cream. Slowly pour the warm cream into the egg yolk mixture, whisking continuously to prevent the eggs from scrambling.

    Strain the Custard

    Strain the mixture through a fine mesh sieve into a clean bowl to remove any lumps.

    Prepare Ramekins

    Place 4 to 6 ramekins in a baking dish. Fill each ramekin with the custard mixture.

    Bake

    Pour hot water into the baking dish around the ramekins until it reaches halfway up the sides. Bake for about 30-40 minutes or until the custard is set but still slightly jiggly in the center.

    Cool

    Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours or overnight.

Caramelizing

    Prepare for Topping

    Once chilled, sprinkle about a tablespoon of granulated sugar evenly over the top of each custard.

    Caramelize the Sugar

    Using a kitchen torch, carefully melt and caramelize the sugar until it forms a golden crust. Alternatively, you can place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.

    Cool the Topping

    Let the caramelized sugar cool for a few minutes before serving.
