Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Filling
In a large bowl, combine the cooked shredded chicken, sautéed onions, black beans, and 1 cup of shredded cheddar cheese. Season with salt and pepper to taste.
Assembly

Fill the Tortillas
Take a corn tortilla, add about 2 tablespoons of the filling mixture to the center, roll it up, and place it seam-side down in a greased baking dish.

Repeat
Repeat until all filling is used, placing each rolled tortilla side by side in the baking dish.

Add Sauce and Cheese
Pour the red or green chile sauce evenly over the enchiladas, then sprinkle the remaining cheddar cheese over the top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
