    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of oil over medium heat. Add diced potatoes and cook until golden brown and crispy, about 10-15 minutes. Season with salt and pepper, then set aside.

    Cook the Meats

    In the same skillet, add another tablespoon of oil. Cook the bacon until crispy, then remove and chop. Next, add the sausage and cook until browned. Lastly, add the diced ham and cook for an additional 2-3 minutes until heated through.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet and scramble until fully cooked.

Assembly

    Assemble the Burritos

    On each tortilla, layer the home-fries, cooked meats, scrambled eggs, and shredded jack cheese. Drizzle with red or green chile sauce.

    Wrap and Serve

    Fold in the sides of the tortilla and roll tightly. Serve with additional chile sauce on the side.
