Preparation

    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for 45 minutes to 1 hour until tender. Remove from water and let cool. Once cooled, cut the tentacles into manageable pieces.

    Make Salsa Verde

    In a bowl, combine chopped parsley, minced garlic, chopped capers, lemon juice, and olive oil. Mix well and set aside.

    Prepare the Legumes

    In a bowl, combine rinsed chickpeas and castelvetrano olives. Add a drizzle of olive oil, salt, and pepper to taste.

Grilling

    Grill the Octopus

    Preheat a grill over medium-high heat. Brush the octopus pieces with olive oil and season with salt and pepper. Grill for about 3-4 minutes per side, until charred.

Assembly

    Plate the Dish

    On a serving platter, arrange the grilled octopus, chilled legumes, and slices of fresh pepperoni. Drizzle with salsa verde and garnish with fresh parsley.
