Directions
- 1
Prepare the Clams
Rinse the clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
- 2
Cook the Aromatics
In a large pot over medium heat, add the nduja salumi and cook until it begins to render its fat, about 2-3 minutes. Add the chopped fennel and sauté until softened, about 5 minutes.
- 3
Add Wine and Clams
Pour in the dry white wine and stir to combine. Bring to a simmer and then add the clams, stirring to coat them in the mixture.
- 4
Steam the Clams
Cover the pot and steam the clams for 5-7 minutes, or until they all open. Discard any that remain closed.
- 5
Make the Herb Butter
In a small bowl, mix the softened butter with the chopped fresh herbs, salt, and black pepper.
