Method

Dough Preparation

  1. 1

    Make the Dough

In a bowl, mix the flour and salt. Make a well in the center, add the eggs, and mix until combined. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

  1. 2

    Prepare the Filling

In a bowl, combine ricotta cheese, Parmesan cheese, egg yolk, salt, black pepper, and chopped basil. Mix until smooth and set aside.

Streusel Preparation

  1. 3

    Make the Streusel

In a skillet, melt the butter over medium heat. Add minced black garlic and sauté for a minute. Stir in flour, panko breadcrumbs, and salt. Cook until golden brown, then set aside.

Assembly and Cooking

  1. 4

    Assemble and Cook the Agnolotti

Roll out the dough to thin sheets. Cut into squares and place a small amount of filling in the center of each square. Fold and seal the edges. Cook in boiling salted water for 3-4 minutes until they float.

  2. 5

    Prepare the Sauce

In a saucepan, heat heavy cream over medium heat. Stir in black truffle oil, salt, and pepper. Cook for a few minutes until slightly thickened.

  3. 6

    Serve

Plate the agnolotti, drizzle with sauce, and sprinkle with black garlic streusel and fresh basil.
