Gnocchi Preparation

Cook the Potatoes
Boil the russet potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.

Shape the Gnocchi
Divide the dough into four pieces and roll each piece into a long rope, about 3/4 inch thick. Cut into 1-inch pieces and press each piece with a fork to create ridges.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Sauce Preparation

Cook the Sausage
In a large skillet, heat olive oil over medium heat. Add the ramp sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.

Combine with Gnocchi
Add the cooked gnocchi to the skillet, tossing gently to combine. Season with black pepper and add pickled long hots to taste.

Serve
Plate the gnocchi and top with grated caciocavallo cheese. Enjoy!
