Prepare aromatics and herbs

Peel and finely grate the ginger. Trim the white part of the lemongrass, remove the tough outer layers, and mince finely. Finely chop the young coconut meat into small pieces (about 1/8- to 1/4-inch). Remove stems from cilantro and mint and roughly chop the leaves. If using kaffir lime leaf, stack and finely shred it.

Combine liquids

In a medium mixing bowl or a jar with a tight lid, pour 3 cups young coconut water, 3 tablespoons fresh lime juice, and 1 tablespoon rice vinegar. Whisk briefly to combine.

Emulsify and sweeten

Add 1 tablespoon extra-virgin olive oil, 1 tablespoon neutral oil (if using), and 1 teaspoon honey to the liquid mixture. Whisk vigorously for 30–45 seconds until slightly emulsified. If using a jar, secure the lid and shake vigorously for 30–45 seconds.

Add aromatics and herbs

Stir in the grated ginger, minced lemongrass, chopped young coconut meat, chopped cilantro, chopped mint, and shredded kaffir lime leaf (if using). Mix well so the coconut meat and herbs are evenly suspended in the dressing.

Season

Add 3 teaspoons sea salt and 1 teaspoon freshly ground black pepper. Taste and adjust seasoning: add more salt or lime juice as needed. The dressing should be bright, slightly tangy, lightly sweet, and mildly savory.

Blend for texture (optional)

For a smoother, slightly creamy dressing, transfer the mixture to an immersion blender or regular blender and pulse 4–6 times until desired consistency is reached. Do not overblend if you prefer visible coconut meat pieces and herbs.

Chill and rest

Cover and refrigerate the dressing for at least 30 minutes to allow flavors to meld and the lemongrass and herbs to infuse. If chilled, stir or shake before serving to re-emulsify.

Serve

Use the dressing over mixed green salads, shredded cabbage slaws, grilled shrimp or fish salads, or as a bright drizzle for tropical fruit salads. Shake or whisk before each use. Keeps refrigerated in an airtight container for up to 3 days; discard if it smells off.
