Prepare Watermelon

Place the 4 cups cubed seedless watermelon into a blender. Add 2 tablespoons fresh lemon juice, 1 teaspoon granulated sugar, and 2 tablespoons cold water to help blending if needed.

Blend Smooth

Blend on high until completely smooth, about 30–45 seconds. Scrape down the sides once if necessary and blend again to ensure even texture.

Strain (optional)

For a silky smooth Volcan Blanco, strain the blended watermelon through a fine mesh sieve into a bowl or pitcher, pressing with a spoon to extract as much liquid as possible. Discard pulp or reserve for another use. If you prefer a pulpy drink, skip straining.

Mint & Finish

Muddle Mint

Place the 10 fresh mint leaves in a sturdy glass or small bowl. Add 1 tablespoon of the prepared watermelon juice (from the batch) and gently muddle 8–10 times to release oils and aroma—do not pulverize the leaves.

Combine

Pour the remaining watermelon juice into a pitcher. Add the muddled mint (including the liquid), and stir to combine. Taste and adjust sweetness or lemon: if too sweet, add a splash more lemon juice; if too tart, add up to 1 teaspoon more sugar dissolved in a bit of water.

Chill and Serve

Fill 4 serving glasses with about 3/4 cup crushed ice or cubes each. Divide the juice among the glasses. Top each glass with about 1/4 cup sparkling water if you want a fizzy finish (optional). Garnish each glass with a lemon (or lime) slice, a mint sprig, and a light sprinkle of lemon zest if using.

Final Aroma

Before serving, clap the reserved mint sprigs between your palms to release aroma and place on top of each glass. Serve immediately while chilled.
