Toast oats (optional)

Place a medium saucepan over medium heat. Add the steel-cut oats and toast, stirring constantly, 3–4 minutes until fragrant and lightly golden. This step enhances nuttiness but can be skipped.

Simmer

Add 3 cups water and 1 cup milk to the saucepan with toasted oats. Stir in 1 tsp fine sea salt. Increase heat to bring to a gentle boil, then immediately reduce heat to low to maintain a steady simmer.

Cook uncovered, stirring occasionally, for 20–25 minutes for chewy but tender oats. If you prefer creamier oats, simmer 25–30 minutes and stir more frequently to prevent sticking. If the mixture gets too thick before oats are done, add up to 1/2 cup additional water or milk, 1–2 tbsp at a time.

When oats are tender and most liquid is absorbed but still saucy, remove from heat. Taste and adjust salt if needed. Let sit, covered, 2–3 minutes to thicken slightly.

Spiced Brown Sugar Topping

While oats simmer, combine 3 tbs packed brown sugar, 1 tbs softened unsalted butter, 1 tsp ground cinnamon, 1 tsp ground cardamom, 1/4 tsp ground nutmeg and 1/8 tsp coarse salt (if using) in a small bowl. Stir until fully combined and slightly spreadable. Set aside at room temperature so butter softens and flavors meld.

Taste and adjust spice balance—add a pinch more cinnamon or cardamom if desired.

Berries & Finishing

Rinse and gently pat dry 1 cup mixed berries. If using larger strawberries, hull and slice them to similar size as other berries.

If you like warmed berries, heat a small skillet over low heat, add berries with 1 tsp maple syrup or honey (optional) and warm 1–2 minutes until just softened. For fresh contrast, use berries at room temperature.

Divide the cooked oatmeal between 2 bowls (about 1/2 cup dry oats yields 2 generous servings). Dollop half of the spiced brown sugar topping onto each bowl and gently swirl to incorporate some into the oatmeal while leaving some concentrated pockets of flavor.

Top each bowl with half of the berries, a sprinkle of toasted chopped nuts (2 tbs total, optional), and a little fresh lemon zest (optional) to brighten flavors. Drizzle with remaining maple syrup or honey if desired.

Serve immediately. Leftover oatmeal will thicken on standing—reheat gently with a splash of milk or water, stirring to return to desired consistency.
