Beat eggs

Crack the 6 large eggs into a medium bowl. Add 3 tablespoons whole milk, 1 teaspoon fine sea salt and 1 teaspoon freshly ground black pepper. Whisk gently until the mixture is uniform in color but not frothy — you want a smooth, slightly streak-free mixture.

Low-and-slow heat

Place a nonstick skillet (10-inch recommended) over low heat. Add 1 tablespoon unsalted butter and let it melt gently until it just begins to foam, not brown. Keep the heat low: the whole technique relies on gentle cooking.

Start scrambling

Pour the beaten eggs into the skillet. Let them sit undisturbed for about 10–15 seconds until edges just begin to set. Using a silicone spatula, push the set edges toward the center, tilting the pan so uncooked egg flows to the edges. Continue gently moving the eggs every 10–15 seconds. The eggs should never cook rapidly — maintain a low temperature so they remain creamy.

Finish with butter

When the eggs are about 70–80% set (still glossy and a little runny), add the remaining 1 tablespoon unsalted butter in small pieces and quickly fold it in. The residual heat will finish cooking them to a soft curd without drying them out. Remove pan from heat when eggs are just set but still glossy.

Prepare broccoli

While heating the pan for the eggs, bring a small pot of salted water to a boil. Blanch 1 cup small broccoli florets for 30–45 seconds until bright green and just tender. Immediately transfer to an ice bath to stop cooking, then drain and pat dry. Alternatively, if you prefer a bit of caramelization, heat 1 teaspoon olive oil in a small skillet over medium heat, add the florets and 1 teaspoon coarse salt, and sauté for 2–3 minutes until edges are lightly browned and tender-crisp.

Incorporate broccoli

If you blanched the broccoli, fold the drained florets into the eggs during the last 15–20 seconds of cooking so they warm through without overcooking. If you sautéed, add them the same way so their caramelized edges stay intact.

Prepare garnishes

While eggs are finishing, finely grate 3 tablespoons aged cheddar, chop 2 teaspoons fresh dill, thinly slice 1 small red chili (remove seeds if you want less heat), and zest a small amount of lemon if using.

Add cheese

When eggs are removed from the heat but still glossy, immediately fold in the grated aged cheddar so it melts from the residual heat, creating rich, creamy ribbons.

Finish and season

Plate the soft scrambled eggs topped with the warmed broccoli. Sprinkle the chopped fresh dill and the red chili slices evenly over the top. If using, grate the 1 teaspoon lemon zest lightly over the eggs for brightness. Taste and adjust with a light pinch of salt and a grind of black pepper if needed.
