Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water to chill while preparing the cocktail (about 5 minutes).

Combine ingredients

In a cocktail shaker, add the Joshi Matcha Liqueur (1.5 oz), chilled sake (1.5 oz), optional vodka (0.5 oz), fresh lemon juice (0.25 oz) and simple syrup (0.25 oz).

Add ice and shake

Fill the shaker with 6 medium ice cubes. Secure the lid and shake vigorously for 10–12 seconds until the shaker is very cold to the touch and the mixture is well-chilled and slightly diluted.

Double strain

Dump the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe/martini glass using a Hawthorne strainer and a fine-mesh strainer to remove tiny ice shards and provide a silky texture.

Dust matcha

Using a small fine-mesh tea strainer or a micro-sieve, lightly dust ~1/8 teaspoon of ceremonial matcha powder over the surface of the cocktail to create a thin, even green layer. Tap the strainer gently while holding it about 3–4 inches above the drink.

Add lemon twist

If using, express the oils of a lemon twist over the drink by holding the twist skin-side down above the surface and giving it a quick pinch, then run the twist around the rim and drop it into the cocktail or rest it on the rim.
