Prepare Berry Compote

Cook compote

Place the 1.5 cups mixed frozen berries and 2 tablespoons of honey in a small saucepan. Add 1 tablespoon water. Cook over medium heat, stirring occasionally, until berries break down and sauce thickens, about 6–8 minutes.

Taste and, if desired, add 1 teaspoon lemon juice or a pinch of sugar. Remove from heat and let cool slightly; the compote will thicken as it cools. Reserve about 1/2 cup for the sundaes.

Prep Fresh Market Toppings

While compote cools, hull and quarter the strawberries, slice the banana, core and dice the apple (toss apple pieces with a few drops of lemon juice if not serving immediately), and halve the grapes.

Lightly toast the chopped almonds and coconut flakes in a dry skillet over medium heat for 2–3 minutes, stirring, until fragrant and golden. Let cool.

If using microgreens or mint, rinse and pat dry. Slice any larger fruit pieces to bite-size for easy scooping.

Assemble Sundaes

Scoop 3/4 cup vanilla frozen yogurt into each of four serving bowls or sundae glasses (about 3 cups total yields 4 small sundaes).

Spoon about 2 tablespoons of warm (or room-temperature) berry compote over the yogurt in each bowl.

Distribute the fresh fruit across the sundaes: about 1/4 cup strawberries, 2–3 banana slices, 2 tablespoons diced apple, and 2 tablespoons halved grapes per serving (adjust to preference).

Sprinkle 3 tablespoons granola and about 1 tablespoon toasted almonds over each sundae for crunch.

Add 1 teaspoon dark chocolate shavings or mini chips to each, and a small sprinkle of toasted coconut if using.

Drizzle each sundae with about 1/2 tablespoon lemon–honey drizzle (mix 1 tablespoon fresh lemon juice with 1 tablespoon honey for the batch) and an additional teaspoon of honey if you like it sweeter.

Top with a dollop (about 2 tablespoons) of whipped cream if using, and finish with a small sprig of microgreens or mint for color.

Serve immediately so the frozen yogurt maintains texture. If preparing ahead, assemble components separately and combine shortly before serving to keep granola crunchy and fruit fresh.
