Place a heavy-bottomed 2–3 quart saucepan over medium heat and pour in 2 cups of pure maple syrup. Bring to a gentle simmer — small bubbles should form around the edges. Do not boil aggressively to avoid burning sugars.
Reduce heat to medium-low and let the syrup simmer gently, uncovered, stirring occasionally with a heatproof spatula or wooden spoon, until it thickens and reduces by about one-third. This should take approximately 12–18 minutes and will slightly coat the back of a spoon. Watch carefully in the last few minutes to prevent scorching.
When the syrup has reached a slightly thicker consistency (it will thicken more as it cools), remove the pan from the heat. Stir in 2 tablespoons of unsalted butter until fully melted and incorporated; this adds silkiness and a mellow mouthfeel.
Add 1 teaspoon of fresh lemon juice and 1/2 teaspoon of vanilla extract to brighten and round the syrup's sweetness. Stir in 1 teaspoon of fine sea salt, tasting and adjusting if desired — the salt balances and enhances maple complexity.
Optional Finishing & Serving
To serve with pancakes/waffles/French toast: warm 8 servings of your chosen base. Drizzle 2–3 tablespoons of the Hudson Valley maple reduction per serving (adjust to taste). Sprinkle toasted nuts and a small pinch of cracked black pepper (about 1/8 tsp per stack) to add contrast.
