Using a fork or a potato masher, mash the avocado to your preferred texture (chunky or smooth). Stir in 1 teaspoon kosher salt, 1 teaspoon ground black pepper, and 1/4 teaspoon ground cumin if using.

Fold in aromatics

Add the finely minced red onion (1/2 small), the minced jalapeño (seeded for milder heat), 2 tablespoons chopped cilantro, and the diced tomato if using. Mix gently to combine, taste, and adjust seasoning with more salt or lime juice if needed.

Cover the surface of the guacamole with plastic wrap (pressing it to touch the avocado) or transfer to an airtight container and refrigerate for up to 30 minutes so flavors meld while you prepare the salsa and tortillas.

Tomatillo Salsa (Salsa Verde)

Roast or boil tomatillos and serrano

Place the rinsed tomatillos and serrano chile on a baking sheet and roast under a broiler or in a 450°F (230°C) oven for 8–12 minutes, turning once, until the tomatillos are blistered and softened. Alternatively, simmer them in boiling water for 5–7 minutes until softened. Roast for a richer, slightly smoky flavor; boil for a brighter flavor.

Blend salsa

Transfer the hot tomatillos and serrano to a blender or food processor. Add 3 tablespoons cilantro, 1/4 white onion, 1 tablespoon fresh lime juice, and 3/4 teaspoon kosher salt. Pulse until mostly smooth, adding up to 2 tablespoons water if needed to reach a spoonable salsa consistency. Taste and adjust salt or lime as necessary.

Cool

Let the salsa cool to room temperature. Transfer to a small bowl and refrigerate briefly if you want it chilled, or leave at room temperature to serve immediately alongside the guacamole.

Warm Crunchy Tortillas

Prepare tortillas

Stack the corn tortillas and cover with a damp towel to keep them pliable while you heat the oil. Heat a large skillet over medium-high heat and add enough neutral oil to lightly coat the bottom (about 1 tablespoon to get started).

Crisp tortillas

Working in batches of 3–4, using tongs, brush or lightly drizzle each tortilla with a little oil (about 1/2 teaspoon each) or place them directly in the hot skillet and hold flat with tongs. Cook each side 45–60 seconds until edges start to brown and crisp. For extra crunch, fold each tortilla in half or into a taco shape and press briefly to set the shape. Remove to a paper-towel-lined tray and immediately sprinkle lightly with fine salt. Keep warm in a low oven (200°F / 95°C) on a baking sheet while you finish remaining tortillas.

Alternative method - Oven baked chips

If you prefer chips: preheat oven to 400°F (200°C). Lightly brush both sides of tortillas with oil, cut into sixths or eighths, spread in a single layer on a baking sheet, and bake 8–12 minutes, flipping halfway, until golden and crisp. Sprinkle with salt and keep warm.

Garnish & Serve

Assemble

Spoon the guacamole into a shallow serving bowl. Create a shallow well or spoon a generous ring of tomatillo salsa on top or to the side (you can swirl a little salsa into the guacamole for a marbled effect).

Scatter 1/4 cup crumbled cotija or queso fresco and extra cilantro leaves over the top. Serve immediately with warm crunchy tortillas and lime wedges for squeezing.

Leftover salsa can be refrigerated in an airtight container for up to 4 days. Leftover guacamole is best eaten within 24 hours; press plastic wrap directly onto the surface to minimize browning. Tortillas are best served fresh; stored crunchy chips keep in an airtight container for 2–3 days.
