Prepare bread and butter
Place the 4 slices of white bread on a clean work surface. Spread about 1 tablespoon of softened butter evenly over one side of each slice. The buttered sides will be the outside of the sandwiches to create a golden crust when grilled.
Assemble sandwiches
Flip two slices of bread so the buttered sides are down. On each unbuttered side, spread 1/2 teaspoon Dijon mustard if using. Divide the cheddar cheese evenly between the two sandwiches (about 2 oz per sandwich), arranging it so it covers the bread to the edges but not overhanging. Top each with one American cheese slice if using, and add two tomato slices per sandwich if using. Lightly season the cheese/tomato with about 1/2 teaspoon ground black pepper per sandwich. Place the remaining two slices of bread on top, buttered side up.
Grill the sandwiches
Place one or two sandwiches in the skillet, buttered side down. Press gently with a spatula to ensure even contact. Cook for 3β4 minutes until the bottom is golden brown and crisp. Carefully flip the sandwiches and cook the other side another 3β4 minutes, pressing gently and adjusting heat as needed so the bread browns without the cheese overcooking. If cheese isn't fully melted after flipping, cover the pan with a lid for 30β60 seconds to trap heat and melt the cheese.
Rest and serve
Transfer the grilled sandwiches to a cutting board and let rest 1 minute to avoid hot cheese spilling out. Slice each sandwich in half diagonally or straight down the middle, as preferred. Serve immediately.
