Method
Ginger Syrup (optional, makes ~6 tbs)
Combine chopped fresh ginger, water, and sugar in a small saucepan.
Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat and simmer for 8–10 minutes to infuse a strong ginger flavor.
Remove from heat, let cool to room temperature, then strain through a fine mesh strainer or cheesecloth, pressing on solids to extract syrup. Discard solids and transfer syrup to a sealed container. Refrigerate up to 2 weeks.
Cocktail Preparation
Prepare glass
If you prefer a salted or sugared rim, rub a lime wedge around the rim of a rocks or coupe glass, then dip the rim into a shallow plate of coarse salt or sugar. Set the glass aside.
Muddle ginger
In a cocktail shaker, add the grated fresh ginger (1 tablespoon). Using a muddler or the back of a spoon, press and twist the ginger firmly for about 10–15 seconds to release juices and oils. This ensures bright fresh ginger flavor in the drink.
Add spirits and sweetener
To the shaker with muddled ginger, add 2 oz Código Reposado Tequila, 1 oz J.F. Haden's Orange Liqueur, 1 oz fresh lime juice, and 0.5 oz ginger syrup. If you skipped the ginger syrup, substitute 0.5 oz simple syrup and increase muddled ginger by 1/2 tbs for balance.
Shake
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Double-strain and serve
Double-strain the cocktail into the prepared glass over fresh ice (or serve neat in a chilled coupe). Double-straining (using a fine mesh strainer in addition to the shaker strainer) removes ginger fibers and produces a smoother drink.
Garnish
Garnish with a lime wheel or wedge and an optional thin slice of fresh ginger. Serve immediately.
Notes: Adjust ginger syrup and/or muddled ginger to taste for more or less ginger heat. Reposado tequila provides a touch of oak and vanilla that complements the ginger and orange liqueur; substitute blanco tequila if you prefer a brighter, less oaky profile.
