Strawberry Maceration

Vanilla Whipped Cream

Optional Garnishes & Accents

Method

Strawberry Maceration

1

Prepare strawberries

Rinse the strawberries under cold water and gently pat dry with paper towels. Hull the strawberries by removing the green tops and any white core with a small paring knife. Slice the strawberries into halves or quarters depending on size so they are bite-sized.

2

Macerate

Place the sliced strawberries in a medium bowl. Sprinkle the granulated sugar evenly over them, add the lemon juice and the optional orange liqueur. Gently toss to combine so the sugar contacts the fruit evenly. Let sit at room temperature for 20–30 minutes, stirring once or twice; the strawberries will release juice and the mixture will become syrupy. For a cooler presentation, macerate in the refrigerator for 30–45 minutes instead.

Vanilla Whipped Cream

3

Chill tools

Place a mixing bowl and the beaters (or whisk) in the refrigerator for 10–15 minutes before whipping if they are not already cold. Cold equipment helps the cream whip faster and hold structure.

4

Whip cream

Pour the chilled heavy cream into the cold bowl. Add the powdered sugar and vanilla extract. Whisk by hand or with an electric mixer on medium-high speed until soft to medium peaks form — the cream should hold a gentle peak but still be slightly glossy. Taste and adjust sweetness if desired. Do not overwhip; stop when peaks just hold their shape.

Assembly & Garnish

5

If using toasted sliced almonds: toast them in a small dry skillet over medium heat for 2–3 minutes, stirring constantly, until fragrant and lightly golden. Remove from heat and cool.

6

Break or crumble the shortbread cookies or ladyfingers into bite-sized pieces if using. This adds a crunchy contrast.

7

To serve, spoon a portion of macerated strawberries and their syrup into individual dessert bowls or glasses. Top with a generous dollop (about 2–3 tablespoons) of vanilla whipped cream. Sprinkle with toasted almonds and tuck a mint leaf on top. Add cookie pieces on the side or layered for texture.

8

Leftovers: Keep macerated strawberries refrigerated in an airtight container for up to 2 days. Whipped cream is best used same day; you can stabilize whipped cream with 1 tsp powdered gelatin if you need it to hold longer.
