Chill glass

Place a coupe or rocks glass in the freezer (or fill with ice and water) to chill while you prepare the cocktail.

Combine ingredients

In a mixing glass or shaker filled with ice, pour 2 oz Dewar's 18 Year Old Scotch, 0.75 oz sweet vermouth, 0.25 oz an aperitif (Punt e Mes or similar), add 2 dashes Angostura bitters and 1 dash orange bitters.

Stir to chill and dilute

Using a long bar spoon, stir the mixture briskly for 20–30 seconds (about 20–30 full turns) until well chilled and properly diluted — the mixing glass should feel very cold and slightly frosted.

Prepare glass and garnish

If you used ice/water to chill the serving glass, discard the ice and water. Express the oils of the orange twist by holding it over the glass and giving it a firm squeeze, then rub the peel on the rim of the glass.

Strain and finish

Strain the stirred cocktail into the chilled coupe or rocks glass over a single large ice cube (optional) or neat. Float the orange twist on the surface or rest it on the rim as garnish.

Serve immediately. Sip slowly to appreciate the layered honeyed, oak, and sherried notes of Dewar's 18 balanced by vermouth and bitters.
