Preheat the oven to 350°F (175°C). Position racks to fit two 9-inch round cake pans or a 9x13-inch pan. Grease the pans with nonstick spray or softened butter and lightly dust with 1 tablespoon flour, tapping out excess.

If using whole walnuts/pecans, roughly chop and toast them in a dry skillet over medium heat 3–4 minutes until fragrant; cool. Measure and grate carrots finely (packed measuring cups).

Combine dry ingredients

In a large bowl, whisk together 2.5 cups all-purpose flour, 1.5 cups granulated sugar, 0.5 cup packed light brown sugar, 1 tsp baking soda, 1 tsp baking powder, 1 tsp salt, 2 tsp ground cinnamon, 1/2 tsp ground nutmeg, and 1/4 tsp ground ginger (if using) until evenly distributed.

Whisk wet ingredients

In a separate large bowl, whisk 4 large eggs until blended. Add 1 cup neutral oil, 2 tsp vanilla extract, and 1/2 cup buttermilk (or plain yogurt) and whisk until smooth and homogeneous.

Combine wet and dry

Make a well in the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined — do not overmix. The batter will be thick.

Fold in add-ins

Fold in 3 cups finely grated carrots, 1 cup toasted chopped nuts (if using), and 3/4 cup raisins (if using) until evenly distributed. Scrape the bowl to ensure no streaks of flour remain.

Bake

Divide batter evenly between the prepared pans (for two 9-inch rounds) or spread into the prepared 9x13 pan. Smooth the tops. Bake at 350°F (175°C) for 25–30 minutes for 9-inch rounds (about 30–35 minutes for 9x13) or until a toothpick inserted into the center comes out with a few moist crumbs and the cake springs back when lightly pressed at center. Rotate pans halfway through baking for even color.

Remove cakes from oven and allow to cool in pans on a wire rack for 10–15 minutes. Run a knife around the edges to loosen, then invert onto wire racks and cool completely (about 1–1.5 hours) before frosting. For layered cake, you may wrap cooled layers in plastic and chill 30 minutes to make frosting easier.

Cream Cheese Frosting

Soften and beat

Ensure 8 oz cream cheese and 1/2 cup unsalted butter are softened to room temperature. In a bowl, beat the cream cheese and butter together with a mixer on medium speed until smooth and free of lumps (about 2–3 minutes).

Add sugar & flavor

Gradually add 3 cups sifted confectioners' sugar, 1/2 cup at a time, mixing on low speed after each addition to avoid a sugar cloud. Once incorporated, increase speed to medium and beat until smooth and fluffy. Add 1 tsp vanilla extract, 1 tsp fresh lemon juice, 1/2 tsp grated lemon zest (if using), and a pinch (1/4 tsp) salt; mix briefly to combine. Taste and adjust sugar or lemon to reach desired sweetness/brightness.

If frosting is too soft, chill 15–20 minutes; if too stiff, add 1–2 tsp milk or cream to reach spreadable consistency.

Assembly & Finishing

Level and layer

If making a two-layer cake, level the tops of cooled layers with a serrated knife or cake leveler to create flat surfaces. Place the first layer on a cake plate or board and spread a thin crumb coat (about 1/3 cup) of frosting to seal crumbs. Chill 10–15 minutes to set the crumb coat.

Final frost

Apply remaining frosting evenly between layers (if using) and around the sides and top. Use an offset spatula for a smooth finish or a spatula for a rustic look.

Garnish

Press toasted chopped nuts around the sides or sprinkle on top, and add 2 tablespoons grated carrot or reserved carrot curls for decoration if desired. Chill the assembled cake 30 minutes to set the frosting before slicing, though serve near room temperature for best flavor and texture.
