Cocktail

For honey syrup (makes ~6 oz)

Method

For honey syrup

1

Prepare honey syrup

Place 3 tablespoons honey in a small heatproof container. Add 3 tablespoons hot water and stir until the honey fully dissolves and the liquid is uniform. Allow to cool to room temperature before using. Store any leftover syrup refrigerated up to 2 weeks.

2

Chill glass

If you prefer, chill an old-fashioned (rocks) glass in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink to cool it, then discard the ice water before pouring.

3

Combine ingredients

In a mixing glass or cocktail shaker, add 6 ice cubes, 2 oz Balvenie 12 Year Old, 0.5 oz fresh lemon juice, 0.5 oz cooled honey syrup, and 2 dashes orange bitters.

4

Stir or shake

For a slightly lighter, clarified texture: shake vigorously for 8–10 seconds and then strain over fresh ice. For a silkier, spirit-forward profile: stir with a bar spoon for 20–30 seconds until well chilled and slightly diluted, then strain over a large ice cube or sphere in the chilled glass.

5

Garnish and serve

Express a lemon twist over the drink by holding the twist skin-side down above the glass and squeezing to release oils, then rub the rim with the peel and drop it into the glass as a garnish. Serve immediately.

6

Tasting note

This preparation highlights Balvenie 12's honeyed, malty notes while adding bright citrus and a touch of sweetness; adjust lemon or honey syrup to taste for more acidity or sweetness.
