Chicken Salad

Sandwich Assembly

Method

Chicken Salad Preparation

  1. 1

    Shred the Chicken

Start by shredding the cooked chicken breast into bite-sized pieces and place them in a large mixing bowl.

  2. 2

    Combine Ingredients

Add the mayonnaise, finely chopped celery, halved red grapes, chopped walnuts, Dijon mustard, lemon juice, salt, black pepper, and fresh parsley to the bowl with the chicken.

  3. 3

    Mix the Salad

Gently mix all the ingredients together until well combined. Taste and adjust seasoning if necessary.

  4. 4

    Chill the Salad

Cover the bowl with plastic wrap and refrigerate the chicken salad for 30 minutes to allow the flavors to meld together.

Sandwich Assembly

  1. 5

    Prepare the Bread

Take the slices of bread and lay them out on a clean countertop or plate.

  2. 6

    Add Lettuce

Place a lettuce leaf on half of the bread slices. This will help keep the bread from becoming soggy.

  3. 7

    Add Chicken Salad

Spread a generous amount of the prepared chicken salad on top of the lettuce on each sandwich.

  4. 8

    Add Tomato

Top each chicken salad filling with a slice of tomato.

  5. 9

    Complete the Sandwich

Place the remaining slices of bread on top to complete the sandwiches.

  6. 10

    Serve

Cut the sandwiches in half if desired, and serve immediately or refrigerate until serving.
