Preheat the Oven

Preheat your oven to 400°F (200°C).

Prepare the Salmon

Rinse the New Zealand King Salmon fillets under cold water and pat them dry with paper towels.

Season the Salmon

Sprinkle salt and black pepper evenly over both sides of the salmon fillets.

Make the Mustard Mixture

In a small bowl, combine the Dijon mustard, lemon zest, and olive oil. Mix well until smooth.

Coat the Salmon

Spread a generous layer of the mustard mixture over the top of each salmon fillet.

In another bowl, mix the panko breadcrumbs with chopped parsley. Then, press this mixture firmly onto the mustard-covered side of the salmon fillets.

Baking

Place the coated salmon fillets on a lined baking sheet. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
