1. Prepare the Ingredients

Dice the bell pepper and red onion into small pieces. Slice the jalapeño if using. If you are adding protein (chicken or beef), ensure that it is cooked and shredded.

2. Mix the Cheese

In a bowl, mix the shredded cheddar and mozzarella cheeses together. Set aside.

3. Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until shimmering.

4. Assemble the Quesadilla

Place one tortilla in the skillet. On half of the tortilla, layer a portion of the cheese mixture, followed by the diced bell pepper, red onion, sliced jalapeño, and shredded protein (if using). Sprinkle cumin, chili powder, salt, and black pepper over the filling.

5. Fold and Cook

Fold the tortilla over to cover the filling. Cook for about 3-4 minutes on one side until golden brown. Carefully flip and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is golden.

6. Repeat

Remove the quesadilla from the skillet and repeat the process with the remaining tortillas and filling ingredients.

Serving

7. Slice and Serve

Cut each quesadilla into wedges. Serve warm with salsa, guacamole, or sour cream on the side.
