Alfredo Sauce
Method
Cooking Pasta
Prepare the Water
In a large pot, bring 4 quarts of water to a boil. Add 1 tsp of salt to the boiling water.
Cook the Pasta
Add 12 oz of fettuccine pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.
Drain the Pasta
Once cooked, reserve 1 cup of pasta water and then drain the remaining water from the pasta. Set aside.
Making Alfredo Sauce
Melt Butter
In a large skillet over medium heat, melt 1 cup of unsalted butter.
Sauté Garlic
Once the butter is melted, add 4 minced garlic cloves and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
Add Cream
Pour in 2 cups of heavy cream and bring to a gentle simmer. Stir frequently to prevent sticking.
Incorporate Cheese
Gradually whisk in 1 cup of grated Parmesan cheese until melted and the sauce is smooth.
Season the Sauce
Add 1 tsp of black pepper and 1 tsp of ground nutmeg. Stir to combine and let the sauce simmer for an additional 2-3 minutes.
Combining Pasta and Sauce
Combine
Add the drained fettuccine pasta to the Alfredo sauce in the skillet. Toss well to coat the pasta evenly.
Adjust Consistency
If the sauce is too thick, add some of the reserved pasta water, a tablespoon at a time, until the desired consistency is reached.
Serve
Plate the pasta and garnish with chopped parsley. Serve immediately.
