Seasonal Fruit Salad

Method

Chicken Salad Preparation

  1. 1

    Combine Ingredients

In a large mixing bowl, combine the shredded chicken, chopped tarragon, finely chopped red onion, chopped walnuts, mayonnaise, Dijon mustard, salt, and black pepper. Mix well until all ingredients are evenly coated.

  2. 2

    Chill

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Banana Nut Bread Preparation

  1. 3

    Preheat Oven

Preheat your oven to 350°F (175°C) and grease a loaf pan with melted butter.

  2. 4

    Mix Wet Ingredients

In a large bowl, mix the mashed bananas, granulated sugar, and eggs until well combined.

  3. 5

    Combine Dry Ingredients

In another bowl, whisk together all-purpose flour, baking soda, and salt.

  4. 6

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped walnuts.

  5. 7

    Bake

Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean. Allow to cool before slicing.

Seasonal Fruit Salad Preparation

  1. 8

    Prepare Fruit

In a large bowl, combine the sliced strawberries, blueberries, diced kiwi, and diced melon. Toss gently to mix.

  2. 9

    Sweeten (Optional)

Drizzle honey over the fruit salad to taste, and toss gently again to coat.
