    Prepare the Vegetables

    Wash the fresh spinach thoroughly under cold water. Remove any tough stems and roughly chop the leaves. Mince the garlic cloves, chop the green onions, dice the red bell pepper, and finely chop the jalapeño pepper (remove seeds for less heat).

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

    In a mixing bowl, combine the wilted spinach mixture, cream cheese, sour cream, shredded cheddar cheese, and Parmesan cheese. Stir until well combined.
