Method

Preparation

  1. 1

    Chop the Vegetables

Start by chopping the carrots, celery, onion, and potatoes into small, even pieces. Mince the garlic cloves.

  2. 2

    Gather Ingredients

Ensure all your ingredients are measured and ready to use. This includes the vegetable broth, water, spices, and optional ingredients.

Cooking

  1. 3

    Combine Base Ingredients

In a large pot, combine the vegetable broth, water, salt, and black pepper. Bring to a boil over medium heat.

  2. 4

    Add Vegetables

Once the broth is boiling, add the chopped carrots, celery, onion, garlic, and potatoes. Stir well to combine.

  3. 5

    Add Herbs and Spices

Add the dried thyme and bay leaves to the pot. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the vegetables are tender.

  4. 6

    Add Optional Additions

If using, stir in the fresh spinach and lemon juice during the last 5 minutes of cooking. This will enhance the flavor and add freshness.

Serving

  1. 7

    Serve the Soup

Remove the bay leaves and ladle the soup into bowls. Garnish with chopped fresh parsley if desired. Serve hot.
