Preparing the Shrimp Filling

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic, diced onion, and red bell pepper. Sauté until the vegetables are soft and translucent, about 5 minutes.

    Cook the Shrimp

    Add the shrimp to the skillet and season with cumin, salt, and black pepper. Cook until the shrimp turn pink and opaque, about 3-5 minutes.

    Add Cilantro

    Remove the skillet from heat and stir in the chopped cilantro. Set the filling aside to cool slightly.

Assembling the Enchiladas

    Prepare the Tortillas

    Preheat the oven to 375°F (190°C). Warm the corn tortillas in a dry skillet or microwave until pliable.

    Fill the Tortillas

    Place a portion of the shrimp filling in the center of each tortilla. Roll the tortilla tightly around the filling and place seam-side down in a baking dish.

Baking the Enchiladas
