Crust Preparation

Make the Dough
In a large bowl, mix the flour and salt together. Add the chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

Form the Dough
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling
In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the cheese, spinach, bell pepper, onion, salt, and black pepper.
Baking the Quiches

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll Out the Dough
On a lightly floured surface, roll out the chilled dough to fit your pie dish. Place the dough in the dish, trimming any excess.

Fill the Crust
Pour the egg mixture into the prepared crust, filling it about 3/4 full.

Bake in the preheated oven for 30-35 minutes or until the filling is set and the crust is lightly golden.

Let the quiche cool for about 10 minutes before slicing. Serve warm with a choice of fresh fruit or house salad.

Prepare the Salad
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar, and toss to combine. Season with salt and black pepper to taste.

Wash and slice the strawberries and kiwi. Combine all fruits in a serving bowl.
