Make the Dough
In a large bowl, mix together the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Water
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough.

Chill the Dough
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Whisk Ingredients
In a mixing bowl, whisk together the large eggs, heavy cream, milk, salt, and black pepper until well combined.

Add Cheese and Fillings
Stir in the shredded cheese, cooked bacon or ham if using, and fresh herbs until evenly distributed.
Assembly and Baking

Preheat Oven
Preheat your oven to 375°F (190°C).

Add Filling
Pour the egg and cheese mixture into the prepared crust, spreading it evenly.

Bake the Quiche
Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is lightly golden.
