Method

Crust Preparation

  1. 1

    Make the Dough

In a large bowl, mix together the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Add Water

Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough.

  3. 3

    Chill the Dough

Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

  1. 4

    Whisk Ingredients

In a mixing bowl, whisk together the large eggs, heavy cream, milk, salt, and black pepper until well combined.

  2. 5

    Add Cheese and Fillings

Stir in the shredded cheese, cooked bacon or ham if using, and fresh herbs until evenly distributed.

Assembly and Baking

  1. 6

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch pie dish or quiche pan. Transfer the dough to the pan and trim any excess.

  3. 8

    Add Filling

Pour the egg and cheese mixture into the prepared crust, spreading it evenly.

  4. 9

    Bake the Quiche

Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is lightly golden.

  5. 10

    Cool and Serve

Allow the quiche to cool for a few minutes before slicing. Serve warm or at room temperature with fresh fruit or salad.
