For the Jazzy Grouper
For the Fried Green Tomatoes
Method
Preparing the Jazzy Grouper
Marinate the Grouper
In a bowl, combine olive oil, garlic powder, paprika, cayenne pepper, lemon juice, salt, and black pepper. Mix well. Add the grouper fillets and coat them thoroughly with the marinade. Let them marinate for at least 20 minutes.
Cook the Grouper
Heat a non-stick skillet over medium heat. Once hot, add the marinated grouper fillets. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and is golden brown. Remove from heat and set aside.
Preparing the Fried Green Tomatoes
Slice the Tomatoes
Wash the green tomatoes and slice them into 1/4-inch thick slices.
Prepare the Breading Station
In one bowl, place the all-purpose flour mixed with salt and black pepper. In a second bowl, pour the buttermilk. In a third bowl, place the cornmeal.
Bread the Tomatoes
Dip each tomato slice first into the flour, then into the buttermilk, and finally coat with the cornmeal. Ensure each slice is well coated.
Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, fry the breaded tomato slices in batches for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
