They're fries. They're not fancy. They are hand-cut, though, and seasoned nicely. Sometimes you just need some fries.

    Cut the Potatoes

    Wash the Russet potatoes thoroughly under cold water. Cut each potato into even sticks, about 1/4 to 1/2 inch thick. For best results, try to make them as uniform as possible to ensure even cooking.

    Soak the Potatoes

    Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and results in crispier fries.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Dry the Potatoes

    After soaking, drain the water from the fries and pat them dry with paper towels. Removing moisture is key to achieving a crispy texture.

    Fry the Potatoes

    Carefully add a batch of fries to the hot oil. Avoid overcrowding the pot. Fry for about 5-7 minutes or until the fries are golden brown and crispy. Use a slotted spoon to remove them from the oil.

    Immediately sprinkle the hot fries with salt, black pepper, garlic powder, and paprika, tossing gently to ensure even coverage.

    Continue the frying process in batches until all the potatoes are cooked. Make sure to let the oil return to temperature between batches.
