Lasagna Directions

    Prepare the Noodles

    Cook the lasagna noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Sauté the Spinach

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Season with salt, black pepper, dried oregano, and dried basil. Remove from heat and let cool slightly.

    Mix the Cheese Filling

    In a large bowl, combine the ricotta cheese, provolone cheese, goat cheese, sautéed spinach, and half of the grated Parmesan cheese. Stir until well combined.

    Assemble the Lasagna

    In a baking dish, spread a thin layer of basil marinara sauce on the bottom. Place a layer of lasagna noodles, followed by a layer of cheese filling, and then another layer of marinara sauce. Repeat the layering process until all ingredients are used, finishing with a layer of marinara sauce. Sprinkle the remaining Parmesan cheese on top.

    Bake the Lasagna

    Preheat the oven to 180°C (350°F). Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

    Let it Rest

    Allow the lasagna to rest for 10 minutes before slicing and serving.

    Prepare the Salad

    In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.

    Dress the Salad

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the salad and toss gently to combine.

Rolls Directions

    Prepare the Rolls

    Preheat the oven according to the dinner rolls package instructions. Brush the rolls with melted butter before baking.

    Bake the Rolls

    Bake the rolls according to package instructions until golden brown. Serve warm.
