Clean the shiitake mushrooms by wiping them with a damp cloth to remove any dirt. Trim the stems and slice the caps into thin strips.

In a large mixing bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper. Stir well to create a marinade.
