Marinade Preparation

Mix the Marinade

In a medium bowl, combine olive oil, minced garlic, smoked paprika, cumin, oregano, salt, black pepper, and red wine vinegar. Whisk together until well blended.

Marinate the Tenderloin

Place the pork tenderloin in a large resealable plastic bag. Pour the marinade over the tenderloin, ensuring it is evenly coated. Seal the bag and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

Grill the Tenderloin

Remove the tenderloin from the marinade and discard the marinade. Place the tenderloin on the grill and cook for about 20-25 minutes, turning every 5-7 minutes, until the internal temperature reaches 145°F (63°C).

Once cooked, remove the tenderloin from the grill and let it rest for about 5-10 minutes before slicing. This allows the juices to redistribute.
