Pasta and Sauce
Method
Preparation
- 1
Cook the Pasta
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- 2
Prepare the Sauce
In a bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until well combined. Set aside.
- 3
Sauté the Garlic
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.
- 4
Combine Pasta and Sauce
Add the drained spaghetti to the skillet with the garlic. Remove from heat and quickly pour the egg mixture over the pasta, tossing continuously to prevent the eggs from scrambling. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 5
Add the Crab
Gently fold in the cooked blue crab meat, allowing it to warm through without breaking apart. Season with salt and pepper to taste.
- 6
Serve
Plate the carbonara and garnish with additional Parmesan cheese and fresh parsley if desired. Serve immediately.
