    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Guanciale

    In a large skillet over medium heat, add the diced guanciale. Cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

    Mix the Sauce

    In a bowl, whisk together the egg yolks and grated Pecorino Romano cheese until smooth. Add freshly ground black pepper to taste.

    Combine Ingredients

    Add the hot, drained spaghetti to the skillet with the guanciale. Toss to combine. Remove from heat and quickly pour in the egg and cheese mixture, stirring quickly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Plate the pasta and garnish with additional grated Pecorino Romano cheese and more black pepper if desired. Serve immediately.
