Prepare the Gnocchi

Boil the potatoes in salted water until tender. Once cooked, peel and mash them. Allow to cool slightly.

In a bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

Divide the dough into small portions and roll each into long ropes. Cut into 2 cm pieces to form the gnocchi. You can press each piece with a fork to create grooves.

Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove and set aside.

Prepare the Crab Sauce

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

Add cherry tomatoes and cook until they start to burst. Stir in the crab meat and heavy cream, then season with salt and black pepper.

Gently fold the cooked gnocchi into the sauce and cook for an additional 2-3 minutes to heat through.

Serve

Garnish with fresh parsley and serve immediately.
