1. Prepare the Sausage

In a skillet over medium heat, cook the homemade sausage until browned and cooked through, breaking it into pieces with a spatula as it cooks. Remove from skillet and set aside.

2. Cook the Broccoli Rabe

In the same skillet, add olive oil and garlic cloves. Sauté for about 1 minute until fragrant. Add the broccoli rabe, red pepper flakes, salt, and black pepper. Cook for about 5-7 minutes until the broccoli rabe is tender. Remove from heat.

3. Assemble the Panini

Slice the ciabatta loaves in half and layer one side with the cooked sausage, sautéed broccoli rabe, and mozzarella cheese. Top with the other half of the bread.

4. Grill the Panini

Preheat a panini press or grill pan over medium heat. Brush the outside of the sandwiches with olive oil. Grill each panini for about 3-5 minutes until the bread is golden and the cheese is melted.
