    Make the Pasta

    In a mixing bowl, combine flour and eggs. Mix until a dough forms. Add water as needed. Knead until smooth, wrap in plastic, and let it rest for 30 minutes.

    Prepare the Bolognese Sauce

    In a large skillet, heat olive oil over medium heat. Add onion, carrot, and celery; sauté until soft. Stir in garlic and cook until fragrant. Add ground beef and pork, cooking until browned. Mix in crushed tomatoes and tomato paste. Season with salt and pepper. Simmer for 30 minutes.

    Make the Béchamel Sauce

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 2 minutes. Gradually add milk, whisking continuously until thickened. Stir in nutmeg, salt, and pepper. Remove from heat.

    Roll Out the Pasta

    After resting, roll out the pasta dough into thin sheets. Cut into rectangles that fit your baking dish.

    Assemble the Lasagna

    Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of Bolognese sauce, followed by a layer of béchamel, then a layer of pasta. Repeat layers, finishing with béchamel on top. Sprinkle with mozzarella and Parmesan cheese.

    Bake

    Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is golden and bubbly.

    Let the lasagna cool for 10 minutes before slicing. Serve warm.
