1. Prepare the Yeast

In a small bowl, combine warm water (about 110°F or 43°C) with the active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

2. Mix the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

3. Knead the Dough

Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for about 5-7 minutes.

4. First Rise

Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

5. Prepare the Pan

Grease a baking sheet or a rectangular pan with olive oil. Once the dough has risen, punch it down and transfer it to the prepared pan.

6. Shape the Focaccia

Using your fingers, press the dough into the pan, creating dimples all over the surface. Drizzle more olive oil on top and sprinkle with fresh rosemary and coarse sea salt.

7. Second Rise

Cover the pan with a cloth and let it rise again for about 30-45 minutes.

8. Preheat the Oven

While the dough rises, preheat the oven to 425°F (220°C).

10. Cool and Serve
