    Prepare the Potatoes

    In a pot of salted boiling water, cook the sliced potatoes for about 5 minutes until slightly tender. Drain and set aside.

    Sear the Fish

    In a large skillet, heat the olive oil over medium heat. Add the branzino and sear for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

    Cook the Aromatics

    In the same skillet, add the sliced garlic and cook until fragrant, about 1 minute. Add the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

    Combine Ingredients

    Pour in the white wine and bring to a simmer. Add the seared branzino and the pre-cooked potatoes to the skillet. Season with salt and black pepper.

    Simmer

    Cover the skillet and let it simmer for about 10-12 minutes until the fish is cooked through and flakes easily with a fork.

    Garnish and Serve
