Steak Preparation

    Prepare the Steak

    In a small bowl, mix ancho chili powder, ground coffee, salt, and black pepper. Rub the mixture generously on the coulette steak. Let it marinate for at least 30 minutes.

    Preheat the grill to medium-high heat. Grill the steak for 5-7 minutes on each side for medium-rare or until desired doneness. Remove from the grill and let it rest for 5 minutes.

French Fries Preparation

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

Cowboy Butter Preparation

    In a small bowl, mix softened unsalted butter, minced garlic, chopped fresh parsley, lemon juice, and cayenne pepper until well combined. Adjust seasoning if necessary.

Serving

    Slice the rested steak and serve it alongside the seasoned French fries. Top the steak with a generous dollop of cowboy butter.
