    Prepare the Onions

    Slice the yellow onions thinly. In a large pot, melt the butter and olive oil over medium heat. Add the onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Deglaze and Simmer

    Once the onions are caramelized, add the white wine to deglaze the pot, scraping up any browned bits. Stir in the beef broth, thyme, bay leaves, salt, and pepper. Bring to a simmer and cook for 20-30 minutes to let the flavors meld.

    Prepare the Herb Croutons

    While the soup is simmering, preheat the oven to 375°F (190°C). Cut crusty bread into cubes, toss with olive oil, garlic powder, and mixed herbs, and bake until golden brown, about 10-15 minutes.

    Serve the Soup

    Remove bay leaves from the soup. Ladle the soup into bowls, top with croutons, and sprinkle generously with gruyère cheese. Place under the broiler for a few minutes until the cheese is melted and bubbly.
