Preparation and Assembly

    Prepare the Chicken

    Flatten the chicken breasts to an even thickness using a meat mallet. Season both sides with salt and black pepper.

    Bread the Chicken

    Set up a breading station with three shallow dishes: one with flour, one with beaten egg, and one with panko mixed with parsley and basil. Dredge each chicken breast in flour, dip in the egg, then coat with the panko mixture.

    Cook the Chicken

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Make the Lemon-Basil Aioli

    In a bowl, mix mayonnaise, lemon juice, minced garlic, and chopped basil. Season with salt and pepper to taste.

    Prepare the Salad

    In a bowl, combine arugula, apple slices, and fennel. Toss gently with olive oil, salt, and pepper.

    Place the cooked chicken cutlet on a plate. Top with arugula salad, pickled shallots, and a sprinkle of asiago cheese. Serve with lemon-basil aioli on the side.
