    Prepare the Rice

    In a medium saucepan, bring 4 cups of water to a boil. Add the white rice, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

    Cook the Andouille Sausage

    In a large skillet over medium heat, add the sliced Andouille sausage. Cook for about 5-7 minutes, stirring occasionally, until the sausage is browned and heated through. Remove from the skillet and set aside.

    Sauté the Mushrooms

    In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes until they are browned and tender. Remove and set aside with the sausage.

    Cook the Seafood

    In the same skillet, add the shrimp and scallops. Cook for about 2-3 minutes on each side until they are opaque and cooked through. Remove from the skillet and set aside.

    Prepare the Spicy Red Sauce

    In the same skillet, add 1 cup of your favorite spicy marinara or arrabbiata sauce. Stir to combine with the remaining juices in the skillet, adding a pinch of red pepper flakes if desired for extra heat. Let simmer for 2 minutes.

    Combine Ingredients

    Return the cooked Andouille sausage, mushrooms, shrimp, and scallops to the skillet with the sauce. Toss gently to coat all the seafood and sausage in the spicy sauce. Cook for an additional 2-3 minutes until everything is heated through.

    Serve

    Serve the seafood diablo mixture over a bed of the fluffy white rice. Garnish with fresh parsley if desired.
